Hi,
I was wondering if anyone can share their experience regarding the techniques and methods for the product color evaluation?
Visual color fans, color wheels, colorimeters, spectrophotometers?
I have a semi-liquid products of mixed vegetables and fruits, and I was wondering what would be the best option to setup the target color as well as allowable deviations.
I also plan to use it for incoming raw materials.
Any help is appreciated. Thank you.

Hello
in my past we used a hunter lab spectrophotometer to measure cheese sauce. I believe they have versions that measure citrus and tomatoes as well. We used a color fan for a visual range for our shelf life testing. Color fans have to be stored away from light and have to be replaced on a designated frequency to protect from fading (we changed ours out annually)
