2.7.1.3 The food defense plan shall be reviewed and challenged at least annually.

Would any SQF certfiied facility be willing to show a copy of your Challenge?

Thank you, Glenn

Hey Glenn,

We challenge the food defense by seeing if it is possible to gain access to the building without being signed in.  Checking to see if everyone is signing in, challenging visitors for passes, etc.  I remember one person saying that they placed barrels around with business cards on them or something with "return to me" written on them.

Here is a website that talks about it:

https://haccpmentor....d-defense-plan/

Here is a mention of it in our forums:

https://www.ifsqn.co...mple-requested/

Hope it helps a bit to get the ball rolling.

Glenn,

Monthly internal audits could also serve as the "challenge"  This sort of thing should be monitored, no? Monthly IA will show failures if any...........then an actual "challenge" wouldn't ahve to be done............the program is technically under siege every day......my 2 cents

We received a minor last week for this. I was told to treat it like the "Mock" recall or Crisis Management Plan tests. Develop a scenario such as: product was found to be tampered with in the warehouse or a door was found to be forced etc. What do you do? How do you monitor it? What measures do you take that prevent it from occurring or reoccurring? Document the exercise and it serves as your test. We have security checks, door alarms, HID entry systems, video surveillance, visitor program and policy, Outside Contractor program but never wrote down the assessment for the entire Food Defense program.

So even if a risk assessment was done but because you didn't write anything down means it never happened. Your PRPs, SOPs, GMPs, security, visitor are your programs but the assessments are your proof it works so they need to be in writing also.
