Any items in the SQF manual/module that are listed as MANDATORY must be done

On top of your list of programs, is all of the day to day monitoring that is a result of those programs must also be completed

Most of those items above with have daily/weekly tasks attached to them

What about your CCP monitoring and verification

Thank you scampi for your quick answer, we do have 2 CCP's which are the internal temperature of the product and the metal detector, those are checked every 2 hours and we registered the results.

I might have to reword my question, our daily checks are being performed mostly every 2 to 4 hours depending on the item, i think it would be more appropriate to ask what kind of annual activities i need to performed to comply? besides the ones that i just mention.

I just want to make sure im not missing something and that i have plenty of time to planned them.

Thank you.

Ah, got it.

You should have a verification schedule prepared to assist you with this very thing. Take your ENTIRE program, break it down by

Element

Sub Element

Task

Then assign a time of year to do it in. If you have a season when production slows down, put things like CCP evaluation or FSS in those times.

The best way to get it all done, is to do it throughout the year, otherwise you'll always end up stuck in a time crunch and something WILL get missed

I got a call from an SQFer yesterday asking if I PLEASE PLEASE PLEASE could send him a customer organic certificate, he had some of their product at his facility and was being audited tomorrow! He was calling from UK, it was 4pm my time, 9pm his time!  You don't want to still be getting ready at 9pm do you?
