Hello! My name is Michael. I am HACCP coordinator and Plant Manager for a small fast-casual chain based in Chicago, Illinois. We have a centralized factory that makes product for our 5 locations in the city of Chicago, and we have one franchized location in Houston that we ship to a few times a month.
