GFCO Certification, Gluten training for production

We are preparing for our first GFCO audit.  We are a gluten free facility so it should be easy, looking at the code we are required to have gluten training for positions involved in production.

 

Does anyone have any recomendations or suggestions for training?

We have used the Silliker Controlling Food Allergens in the Plant DVD (it is also available for streaming).  It is in English, Spanish, and French, which is very helpful to ensure that your staff all get the same education.  It has a post-test as part of the evaluation.  It hasn't been updated for a while, so the data is a little "off" on what the Candaian allergens are as well as the number of people with allergic reactions.  But the overall content is very good.

 

I would also check with the group that is certifying you.  We are GFCO certified and they require additional information on celiac disease to be a part of the education.
