I help operate a family wholesale oyster business in the kansai (near Osaka) area in western Japan. We've been working to certify as many of our products as possible. This is not my industry, I actually do more computer related work as CTO, but it's a family company so we work with what we've got. I've been studying and have been certified by the Japanese Seafood Commission (I guess that's an OK translation) as HACCP trained. Thanks in advance for any help!
