We receive, store and ship imported peeled garlic. It comes prepackaged. 

Any suggestions on Hazards?

4 5lb jars in a ctn. (20lb ctn). MAP
96 ctns on a pallet.
Pallet is edgeboared and wrapped.

There is inadequate info. to give  detailed comments however the enclosed snippet from a haccp plan may give you a few ideas for doing an evaluation -

PS - I haven't checked but if IRC Primus usually offer quite good Guidance materials for their Clauses ?
