Hello guys, we just had our FDA inspection this week, which actually took 4 days back and forth, and finally it was closed out today. However, we had some issues about our seafood HACCP plan. Basically the inspector just said that I did not receive any seafood haccp training, so I need to take a formal training. I actually took a so called seafood haccp training (1 hour long) from 360training.com 5 years ago, which I thought it was a real seafood training until was told by this inspector that it was definitely not. Since that, the inspection just went down the hill... Now, I have found a formal training from SGS, which is a virtual training, but it will begin until May. At this point, can anyone share a template of your seafood HACCP? It will be greatly appreciated ! Meanwhile, I will do my own study as well. I already found FDA Fish and Fishery guideline online. Another question, is FDA Food Code 2017 only applied for retail, rather than food manufacturer ? It was told by the inspector that FDA Food Code 2017 cannot be used as supporting document for food industry. BTW, we are making fully cooked shrimp egg rolls using cooked shrimps. Thank you, David
