Yes I want to prepare a Food safety risk assessment for poultry processing plant and need to cover the whole process including cleaning , maintenance and pest control activities too. Actually I have prepared this risk assessment, but at the last audit, the auditor asked to add the  following processes separately.

 01. cleaning process,

 02. maintenance process

 03. pest control

These would typically all be handled in a PRP manual which you should have prepared as a part of the HACCP plan.
