Looking for guidance or syllabus to learn food safety management

Hello, i'm new here. I'm an agricultural student wanting to know more about food safety management.

 

I've browse the internet for the past few days, and honestly it's so overwhelming. I've been to FSSC, ISO's web, read book (just a few page so far, lol) and even reddit. 

 

So right now, i want to make my HACCP plan but don't have a dummy product. Do you guys know where can i find a dummy product, or if you could just give me a good dummy product to make this project happen. Thank you.

 

 

PS: A guidance/syllabus to learn food safety management will be much appreciated.

Hi,

 

I would start with learning and building a food safety plan.

 

There are several resources for this. The first link is to the public version of FSPCA's training manual. Very good for learning and it is used when obtaining the PCQI certificate

https://www.fda.gov/...ty-plan-builder (FDA released a program that lets you build a food safety plan)

 

Keep in mind these trainings are based on US regulations

IMO this website/haccp tool is a relatively easy read/ haccp introduction and has some excellent worked examples -

PS - you don't need to open an account, just click on the "help" and you will see the available content/course. especially see the Resources tab.

 

PPS -  if you find the example in above course a little "heavy" some simpler (explained) examples can be found via the link inside the recent post which is linked below but note that the authors do not claim their presentation is the only possible solution but equally intended as a haccp  demonstration for the various processes included -
