Hi!
Starting to work on a project with a small bakery (small stand mixers, ovens, etc).
Only 1-2 staff! So not huge.
What sort of items should I expect to put on my maintenance list, and what kind of maintenance?

It is very difficult to determine what you need to do regarding maintenance from afar.

 

Best you can do is make an overview of all the materials that you have in house (ovens, scales, light fixtures and mixers but also floors, walls and cooling systems).
You can probably find some maintenance information in your product specifications, use that if possible. If not, use your best guess. Older machines probably need more maintenance.

 

Add your maintenance frequency to your overview and ensure that the maintenance is followed up on.
Adjust in the future when it seems that more/less maintenance is needed.

 

Some materials may not need ''maintenance'' in the literal sense that often, but it can be smart to check if they are still working as intended. An oven of cooling system that is off, may still work, but is not going to be good for your product quality.

Also keep an eye for your materials begin complete and without damage. I have seen mixers/machines/walls with chipped paint and floors with cracks. All need to be maintained.

AJL,

 

Are you going to be conducting maintenance on the building as well?  Is it a rental, where maintenance i completed by a landlord or service tech?  Or do you own it and the maintenance will be yours?  Maintenance will be incredibly important for keeping things at temp so keep an eye out for that.  

 

You could always look at the code downloads for SQF and make up a quick list of items that you will need to keep functional and clean.

We start out with everything.
This includes mfg recommendations.
We then eliminate items not requiring maintenance

Hey AJL,

 

Oven maintenance could include:

 

Cleaning

Air Pressure Switches

Sensors and Connectors

Heating Elements

Make sure there is no arcing in the unit

Power Supply

Airflow check

Heat Seals

Hi AJL,

 

I suggest you ensure at least one person, preferably 2, in your diminuitive team has some familiarity with Baking Systems.

 

The basics involve Production Control, Quality Control and Resources although they occasionally all occupy the same hat. :smile:
