Knives Dip with Sanitizer (Quaternary based- Quorum Clear) in Processing Area

Hello, 

We have a cut-process area for fruits, vegetables where Kitchen/Periknives are used for cutting and peeling. 

These knives are cleaned daily and stored in Knife Dip Station filled with Quorum Clear (Ecolab) Sanitizer- 200-400 PPM. 

This Knife-Dip station is replinshed with sanitizer as needed or weekly. 

What do you guys think about this practice? Please provide any suggestion on frequency of replenishing the Knife-Dip station with Quorum Clear (Ecolab) Sanitizer- 200-400 PPM.

How often are you checking the ppm of sanitizer.

Twice Daily Checks for Sanitizer

So change the sanitizer when the ppm falls under 200ppm and/or when the sanitizer is cloudy/dirty looking.

If these two are good then your weekly or as needed is justified.
