Hello All,

       Is it possible to set Raw material manual sorting(Sorting of Foreign matters like Metal, Wood, Glass, Plastic pieces) as OPRP/CCP in Ginger paste manufacturing process. Because there is no other control measures after this process.

In my opinion, you can't categorize manual sorting as a CCP, because a critical control point needs a criticial value (critical limits must be measurable, observable, and can be monitored during the actual operations for the control of food safety).

 

No matter how well you operate manual sorting, you can't guarantee that your employees are infallible and will remove all foreign material, so you have no critical value you can meet. A metal detector or X-ray detector that is regularly checked, will do the job.

It might be an OPRP if you use a sieve, or, but with a likely considerable amount of disagreement/debate, even a CCP.

             It's a high moisture paste like product(Garlic Paste), we can't able to use metal detector, Right?

I've worked at a company that produced soups and sauces with a water content of more than 80% and they had no problem implementing metal detection.

They did apply it to the final packaging rather than inline, though.

 

What makes you think metal detection on high moisture products can't be used?

       I worked with dry products manufacturers only, there if the products has high moisture content means the machine alarms due to moisture's conductivity. After seeing your post, Now I searched in google & found there are metal detectors for pastes & liquid items too.

Hi Raj,

 

Might add that MD only tells you if metal is present, it doesn't selectively remove it as such. You will presumably still need manual sorting (??)  if there is gross contamination.  Detection capability of MD is also related to aperture size.
