BRCGS 3.5.4 Management of Outsourced Processing and Use of 3rd Party Warehouse

Good Morning,

We process fresh raw meat products generating meat trims. The trims are boxed and blast frozen before (due to limited holding freezer capacity on site) being dispatched to a BRCGS Certified Frozen Cold store. The trims are then recalled to site as needed for further processing.

 

Current Controls include:

  • The cold store is a BRCGS Certified approved supplier.
  • An agreement is in place between our company and cold store detailing expectation of service.
  • The process is included on our HACCP Flow.
  • All Product is inspected when it returns to site.
  1. Are these sufficient controls?
  2. Do I need to undertake a Hazard Analysis of the outsourced process steps as part of our HACCP plan or is sufficient to reference the cold stores plan (of which we hold a copy)?   

Also...

 

 

Due to space limitations on site we will arrange for the delivery of bulk consignments of raw materials/finished products directly into BRCGS Certified cold store (Frozen Products) or Warehouse (Dry seasonings). These products are then delivered into our site as needed.

 

Current Controls include:

  • the cold store/warehouse carry out goods in checks in line with their HACCP 
  • The acceptance requirements and the need to alert our company in the event of deviation/issue is detailed in the agreement between our business.
  • All products are checked inline with our goods in procedure on delivery to our site.
  1. Are these sufficient controls?

What specific controls and inspections are performed upon product returning to your site?

       It appears from your description that the warehouse is only a storage facility for this product. Are the trims coming back to you frozen, which could be considered a 'process'? Otherwise, I wonder if it meets the BRCGS v9 definition of a "outsourced process", as it does not appear that the warehouse is processing your WIP.

       The details you give on the activities between your operation and the warehouse sound solid.

Products are subject to our standard  goods in checks (identify, quantity, condition, check labelling, temperature, pest activity, chemical odors)

You are correct the warehouse is just storage. The trims return frozen. It is my understanding that it is the act of the product leaving and returning for further processing that qualifies the storage as out sourced processing.
 

 

Where any intermediate process step (including production, processing or storage) in the manufacture of a

product is outsourced to a third party or undertaken at another site, and subsequently returned to the site, this
shall be managed to ensure it does not compromise the product safety, authenticity, legality or quality.
