Our process is currently making RTE macaroni salads, coleslaw, & potato salads. We also make some RTE surimi seafood salads. A few of our salads contain less than 2% cooked bacon so we do not require USDA inspection. We are currently inspected by FDA and our State Agriculture departments.

 

If we were to develop a RTE salad that is Tuna based, would this require us to be monitored by the USDA?

USDA does meat, poultry and eggs.

For your company it would still be the FDA.

Make sure you are looking at the FDA seafood HACCP regulations for the tuna and other seafood items. I would also recommend you take the seafood HACCP class if you haven't either. The rules are different from FSMA regulations.
