Hi, 

 

We purchase bulk product (ex. Jalapenos) and send the product to shelf life testing. What are limits for yeast/mold/APC for it to pass the shelf life test?

We purchase bulk product (ex. Jalapenos) and send the product to shelf life testing. What are limits for yeast/mold/APC for it to pass the shelf life test?

I deduce this is raw green peppers.

Official Micro limits are probably non-existent.
