any document or article related to best practice for storage dried foods regarding relative humidity? .

 

Maximun, meditions, scientific data...

This information can often be obtained from suppliers or online/published sources.  For example, one our capsule suppliers recommend a relative humidity range of 35-65%.  One of our suppliers of ingredients and a similar website had recommended a maximum relative humidity of 55%. 
 
Herbal Drugs and Phytopharmaceuticals: A Handbook for Practice on a Scientific Basis, 2nd Ed., Wichtl, M., CRC, 1994; p 28 recommends a maximum humidity of 60%.  For spices I think they could be similar.
 
Therefore, I would recommend checking with your suppliers and online/published sources that are relevant to the dried foods that you are storing.
