Hi guys, 

 

could You help me to find a scintific literature what can help me to validate Used by date for vacuum fresh Rainbow Trout Fillets?

 

I want to do a shelf life tests (its a new product) and have no idea how long vacuum can extend the used by date.

 

Do You think, the product could be safe within 10 days?

Hi, 

 

Usually you need to do a shelf life testing (Lab) and organoleptic testing. 

 

You can purchase two books from Campden BRI 

 

G46/2 Evaluation of microbiological shelf life of foods (campdenbri.co.uk)

 

G11/2 A code of practice for the manufacture of vacuum and modified atmosphere packaged chilled foods (campdenbri.co.uk)

Yes, i know - but dont want waste money, if the shelf life will be to long, thats why im asking for the help - im completly new with validations

How much is a recall worth to you if you make people sick with your product. Seriously

 

If you don't fully want to participate in your job function, find another field

Some missunderstandings we have here,  i think - so i will try to explain  

 

i didnt say - i will base just on the literature,

 

when i wrote "i dont want waste money" i thought about situation like that: before i will send product to check by lab, i wanted to know what says the scientific dates,  Im aware also of the risk this poses for consumers and if i say - im new, doesnt mean i dont like/feel my function, just i feel unsure and wanted know opinion of more  experienced colleagues in the industry.

hi, 

 

To be honest, it doesn't cost that much to collect samples and send for a shelf life testing.

 

if you are new to validation you would be looking to buy books and do a research. Your shelf life must be supported with lab results, literature etc.  

 

We wont be able to clarify a shelf life just like that, we don`t know what type of vac pack machine you are using etc, there are many factors and they could give us a different outcome.

In the USA, I get help from the universities. They have the expertise and can provide direction. Other options - text books, companies that make the machines you use, or go to the grocery store and look at similar products. I would try searching for more generic fish if you want an idea how long to run a shelf life test. These are places I would start.

My point is that trusting a lab to run shelf life for you as per their accredited procedure is not a waste of money--they will happily explain what they use and how they perform the validation for you

 

Then you can support those findings with PROCESS and packaging and species literature
