What approvals and controls do we need from third party processor of our RTE product?

Good morning all

 

I work at a seafood company. We send our fish eggs off site to be processed into caviar however the product is labelled as our brand.  I have just realised that the previous QA manager has not got any information on file for the company who do the processing. We have no HACCP cert, no flow plans for that matter no documentation at all from them. 

So my question i guess, especially being a RTE product we should have all this on file and site audits for the processor? being that it is our product if there were to be a recall the responsibility and fall out would be on us? 

 

Any help on this one would be greatly appreciated.

Yes, this sounds like they're effectively a comanufacturer for you so personally I would audit them, not just rely on 3rd party schemes, especially as this is a product which is likely to have Listeria presence from time to time.
