Hello,

 

Which kind of documents that we have to ask to our provider of CO2 gas?

 

For information, CO2 is in direct contact with our product (pastries) because we need it for the preparation of the dough

You need something from the supplier that shows the CO2 is food grade.

At minimum: LoG that includes the CO2 delivered to your facility is food grade, lot coding/tracing of each delivery of CO2 gas.  I don't know how many gas suppliers have any GFSI certs these days, but I'd want some type of statement from them regarding a defense/fraud program that ensures you're getting untainted gas.  And I don't know how common it is for various facilities, but when I had to use food grade liquid nitrogen at my spice plant, we had a description of the specific nozzle and hoses they used to refill our bulk tank:  It was unique and dedicated to delivering only food grade liquid nitrogen from this supplier, meaning if a truck full of a different chemical showed up to fill our bulk tank, they physically couldn't make the connection.  That last bit really made our auditors joyful to read, and it also applied to portable tanks we would sometimes use.
