We are going organic. Currently we use an alcohol based sanitizer or quat sanitizer for any equipment that stays assembled. For smaller stuff we use the three sink method - wash, rinse, sanitize with quat.
Does anyone have a recommendation to replace quat in the three sink method other than PAA? Alcohol is costly and unrealistic for the amount of dishes we have and there are some material compatibility concerns with PAA. Are there any good off-the-shelf vinegar-based solutions or something milder than PAA? Preferably something cost effective with a short dwell time.
