Validating an 18-Month Shelf Life for Frozen Sausages – Any Supporting Research?

Hello everyone

I am seeking information regarding the shelf life of frozen meat sausages. I have observed that many frozen products in the industry indicate a shelf life of 18 months. However, I have been unable to locate any supporting studies that validate this 18-month shelf life for frozen products. I would appreciate it if anyone could provide relevant documents or research on this matter.

You have to do your own shelf-life studies. Too many variables such as ingredients and packaging.

thanks for the replay. Its a new production line for us. we can start  shelf life study now but will take time. so what shelf life can be given for the products now that have some study evidence which is available.

Shelf life for food safety or for quality?  

 

Probably safe for extended periods of time, but not so much for quality purposes.   LIke K siad, best to do your own studies

you need to run a small batch with the same recipe/packaging etc    BEFORE turning on actual production..............way too many variables to answer your question

thanks for the replay. Its a new production line for us. we can start  shelf life study now but will take time. so what shelf life can be given for the products now that have some study evidence which is available.  

If you need to go into production now, and can't wait to do a shelf life study to do so, why not just see what other companies doing the same thing are claiming and go with that.   I agree you need to do your own shelf life study, and if you're GFSI you have to anyway, ongoing shelf life testing is the new thang, in fssc 6 anyway.

 

But I totally understand if you're a startup, you can't hold producing your product until you do a shelf life study.   So just do what others are doing, and stay on the conservative side of it for your first year, until your internal study is done.

What kind of product did you see a shelf life for 18 months. We do raw uncured brats - frozen - 6 month shelf life. 

Now if it were cured, cooked, etc - you probably could get a longer shelf life. 

 

You have to give us more information to what type of product it is.
