According to the standard, the oPRPs are to join the CCPs (Critical Control Points) in creating the backbone of the system. Since then, the use of this crucial food safety tool and its differentiation from the traditional CCP has caused much confusion and controversy. In this Webinar we will refer to real case studies and offer a very pragmatic and easy to understand methodology for identifying and classifying critical control measures throughout the food chain.
