Hi all,

I was wondering if anyone knows possible hazards associated with preservatives and leavening agents like, sodium bicarbonate, sodium aluminium phosphate, Monocalcium phosphate, calcium propionate?

actually these called additives , additives is not the part of food but it is used to enhance the food characteristics ( e.g color , flavor, shelf life , aroma etc), as additives use in very small quantity in food( in ppm, ppb) so in my point of view the following hazards might be associated with these type of addtives.

1 ) biological hazards (for leavening agent)
2) permitted value according to WHO or you can see in the codex . ( if use above the permitted value it can be dangerous for health)
3) physical hazards ( metal , wood)
