Dear Alina,

Welcome to the forum ! :welcome:

I assume you are referring to traditional HACCP.

If I understand correct, yr question is regarding allergenic characteristic of gluten in wheat, ie whether or not the labelling (declaration) step for a related product X in a process Y is a haccp/CCP or not ?

I’m not familiar with gluten specifically but depending on the design of the specific haccp system, I hv seen the general “allergy” labelling “hazard” treated in haccp via the use of either PRP or CCP. It may also depend on the geographical location, eg legislatory requirements.

An example for each of PRP and CCP methodology is given below –

(eg see pg 42)

Attached File  aa02 - Fish and Fishery Products Hazards and Controls Guidance 508.pdf   4.86MB   58 downloads
(eg see pgs 365,382)

PS you might find this recent 2009+ document which discusses the general food allergy problem of interest also -

The non-labeling of "wheat"on your product label is likely to lead to a food safety concern and a regulatory non-compliance but labeling is NOT a product transformation process step and as such, can this step be a CCP when it is ONLY a regulatory compliance step instead. However if you feel, labeling is a CCP, you only need to provide validation support.

I agree with the comments stated by Charles Chew in that it is of food safety concern and is largely a regulatory compliance. However some standards may treat it is a CCP and in that case you have to validate it by performsing a risk assessment on that particular allergen.

Dear Charles,

Thank you very much for all informations ,Posted Image

We dont have any chemical or biological process,
the products also raw materials we only packaging it in a small amount.
.we buy milled wheat and wrap it and sell :)) like other product (rice and legumes)

the product name is "wheat" we sell it with this name ..

and in the regulation , wheat is one of the allergen compund that contains gluten

and I buy the packaging material already and ofcourse with the printed name of product :)) there is no need for more decleration in the package.

Dr..Ajay shah thank you for your comment ..

best regards

Alina
