Dear All,

I have searched the internet for a list of food grade materials and i have not received much info. A common example is wood is not permitted in food processing areas but materials like copper and others i want to know if it is permitted. Is there a list with description and details available? I work in a catering industry.

The food contact materials are described in the 21 CFR 174 - 21 CFR 190. Important starting points are:

  • 21 CFR 175 Indirect food additives: Adhesives and components of coatings
  • 21 CFR 176 Indirect food additives: Paper and paperboard components
  • 21 CFR 177 Indirect food additives: Polymers
  • 21 CFR 170 Food additives
  • 21 CFR 171 Food additive petitions
  • 21 CFR 172 Food additives permitted for direct addition to food for human consumption
  • 21 CFR 173 Secondary direct food additives permitted in food for human consumption
  • 21 CFR 178 Indirect food additives: Adjuvants, production aids, and sanitizers
  • 21 CFR 180 Food additives permitted in food or in contact with food on an interim basis pending

When you mention safe food grade materials, I imagine you are referring to building materials since you mentioned wood?

In Australia, we are able to obtain that kind of confirmation from our local councils. There are also ISO standards that cater for building materials within the food manufacturing industry.

Try your country's version of the AS 4674-2004 Design & Construction.

Food grade materials may also refer for example to lubricants (used for maintenance purposes), seals etc.

When looking for those materials one should make it clear to his supplier that they must be food grade materials/substances. A certification should be also provided by the supplier.

Another issue is water. In most applications potable water is ok. But there also other applications where for example even better quality (e.g. Reverse Osmosis treated) water may be required.

The same with steam. When live steam (direct steam sypply to the product) is used, it must be free of substances (chemicals) which are not allowed in food.

I would suggest that whenever something is required and according to the specific application one asks the experts (e.g. suppliers) and also searches for relevant literature.
