The product is fresh mangoes for export through a Vapor Heat Treatment system.

Any help would be appreciated.

Hi Mind over Matter,

You will need to design the HACCP plan by following your complet process and then conduct the risk asseeement for each step. You will need to walk the flow diagram.

There may be other IFSQN members who may have written up a HACCP plan that may fit your process.

Sorry but you will have to write up tha HACCP plan yourself.
