Taking Temperature of Carrot Sticks

Hi All.

Does anyone have any recommendations for the best way to monitor temperature of products such as carrot sticks or shredded cabbage in order to verify if they are at temperatures of <8 degrees C? A normal probe has already been ruled out...

Hi pops, did you try IR Infrared Laser Gun Temperature Thermometer ?

Infra Red guns are not as accurate as probe thermometers but will give you some indication. You can place a probe within a bag of shredded cabbage to get the surface temperature. I often use this method to measure temperture.

dear poppy,

why was a normal probe ruled out ? no bag penetration allowed ?

Not sure if it works for (plus) temperatures but the usual Codex method for sub-zero degC packaged product in stores is to place TC probes sandwiched between adjacent cartons. Sounds illogical but it is well documented (inc. this forum somewhere :smile: ).
