Hello,
Hope everyone is having a super day. My question is this. We make a washed rind semi- soft cheese which is aged in a cooler for a week. It is washed twice with a B. Linen mixture. A mold appears on the surface of the rind at about a two week time period. The mold is about a pin point black to dark grey mold and is easily scraped off. Does anyone have any idea where it might be coming from? The cheese is stored on trays on a rolling cart in the cooler. The cheese is covered in a 2 ply cheese paper and then a plastic bag covers that. Thank you so much for your input.
