Hello, everyone, I have one question:
Is it possible to use frozen raw meat (poultry, pork) for these finished products within EU ?
A/
- defrosting (thawing) of raw meat material
- mincing of meat
- forming
- quick freezing to an internal temperature of not more than -18 °C.
B/
- defrosting(thawing) of raw meat material
- mincing of meat
- mixing with igredients
- forming
- quick freezing to an internal temperature of not more than -18 °C.
C/
- defrosting (thawing) of raw meat material
- tumbling with the brine and meat
- quick freezing to an internal temperature of not more than -18 °C.
I know, that it must be assessed with respect of :
* Regulation (EC) No 853/2004
and
* Council Directive 89/108/EEC relating to quick-frozen foodstuffs for human consumption,
but we have received different guidance from our government authorities in this matter.
