Hi,

Im still new in food industry. Now im working with beverages manufacturing company.

My problem is that, how we can define the z value? from where? is it from retort graph?

FYI, the product contain the pH value around 3.00 to 3.70.

Dear ati,

The definition / equation is more or less standard and available in any text book. However the actual value used in practice may be from a specific analysis under controlled conditions but is often via a review of available published, validated, experimentation on the actual (or similar) food matrix / conditions involved.
