Raw Material Chemical Characteristic - ISO 22000 clause 7.3.3.1

Hi all,

Under clasue 7.3.3.1 there is a requirements to describe the biological, chemical and physical characteristics of the raw matetrial.

I can understand the biological and physical description of the raw material (example: dry powder flavouring).
What is the requirement for Chemical characteristic?

My consultant give me the impression to have the heavy metal, agriculture pesticide residue for that requirement.

Is it true? or it suppose to have the nutritional value as the chemical property? or what should be the actual description for chemical characteristic.

It would depend on the material being purchased and the information required e.g. chemical composition or food safety hazards. The consultant may be correct that chemical contaminants such as heavy metals and pesticides should be provided if this is considered a risk. It could also cover the chemical composition of the product. Usually nutritional values are considered as a separate section to the chemical specification.

For most people, the first step in responding to the FS part of the standard is to obtain / generate a product specification. And similarly for ingredients / inputs.

This document should answer the basic FS / BCP questions as in yr OP.

It is impossible to say much more without info. on yr product / process.

I was wondering if I have the product specification from the supplier, do I still need to compile all the information in a separate document or I just need to keep the product specification sheet in a file is suffiicient to fulfill the requirements.

Dear kuokht,

The documentation requirement is basically as per first 3 paragraphs of 7.3.3.1. AFAIK, cross-referencing is acceptable (and for legislatory items probably inevitable).

Basically you are documenting support for criteria / data to be utilised in the following hazard analysis.

Hi Peter

Chemical characteristics are usually things like Available Water, Moisture, Total Solids, Fat, pH, Total Acidity etc.

Your Consultant is referring to potential chemical hazards.
