Food safety question about frozen pre-packaged cheese balls

Hello,

 

So I am currently working on a new product project. We are having a company ship over frozen pre packaged cheese balls in containers. Our job is to defrost them and then add olive oil and then ship them back. Should I be afraid of any food safety concerns during the dethawing step or during any of the process? Thank you for your responses!!

Lazlo,

I would say yes you should be "afraid" (concerned, informed?). There are Food Safety concerns associated with everything we do in the food processing industry, and you need to conduct a hazard analysis on the product and process.

Are you in the process of conducting a hazard analysis on this process?

You don't say what type of cheese it is, as there are different hazards associated with different cheeses.

Hello,

 

No we have not worked on a hazard analysis yet. The cheese is a soft cheese and the milk used for the soft cheese has been pasteurized. I am trying to write up a procedure process and any food safety concerns for my boss to see. Where do you think I should start or what would the concerns be? I know that as long as I keep it refrigerated while defrosting it should be okay for microbrial growth right?

Hi Lazlo,

   Try looking at the product spec sheet or asking your cheese supplier directly about defrosting.

Is this a contract pack and the cheese going to be in your customers brand/label?

Hello,

 

Yes we are taking the packaged frozen cheese balls in the containers already, defrosting and adding oil here and then sending them back. I am trying to figure out if we are okay if we just keep the cheese balls refrigerated the entire time and have proper filling procedures that we should be okay.

Sorry if that last post wasn't clear. The company is sending the already packaged cheese balls to us. We are defrosting and filling here and then sending back.
