Thank you for your help Dinesh,

 

I was wondering if there is regulations about the need to do that kind of test and what are the parameters. 

 

In some countries there is legislation about the control of free fatty acids or polar compounds in frying oil, I don't know what is the case in China, or more specifically Shanghai.

I saw a recent article about street food vendors in China.  Cooking oil is expensive or scarce.  So the street vendors boil down raw sewage to make their cooking oil.
