Looking for direction on methods for documentation of CCP monitoring records in a wet environment. Need to record the ppm, temperature and exposure time of product at the point and time of monitoring activity in wet environment. Looking for ideas ....

Use an Apple Ipad that is waterproofed in conjunction with your mobile food safety management system software.
There are also damage and waterproof tablets that can be used, however from a cost standpoint getting an apple dipped in the appropriate solution is best way and will save a bit of money.
