Hi,
I'm preparing a template (excel file) about the raw material risk analysis (likehood x gravity). The non conformity received during the last visita was about this: the auditor ask to justify the likehood and gravity with literature scientific reference. First, do you have a similar excel file and where are the sources for this kind of request? Thanks a lot

Hi michela,

 

Please inform which FS standard/paragraph number is involved, if any ?

 

Plus the raw material / finished product /process involved. eg is it RTE ?

Hi,
No any FS standard asking for this.....it is only a customer(english retailer) that asked. He told me that every single "number" has to be justify (for the gravity we have to find scientific resource). This is low risk production (gran, pulses and wheat)

I’m not sure how much technical background you have regarding HACCP ? This is a topic with a very wide scope. One popular methodology for risk assessment in haccp uses your formula plus a risk matrix. But there are many other methods, eg Decision Trees. Any textbook on haccp should detail the options, eg Practical HACCP by Mortimore et al, 3rd ed, 2013.

 

One forum example (there are many others) of the use of a risk matrix plus  Likelihood(L)/Gravity(=Severity[S]) data is in the Excel sheet in linked post below . This basic method is common but (many) variations are possible.

The probability values for L typically come from experience (Yours/Literature) while values for S primarily come from the literature. There is subjectivity in both cases.

 

There are some older threads here which discuss in detail the choice/development of a basic risk matrix. Also a million+ sources (well 100,000 anyway :smile: ) on the net, eg try googling "haccp risk matrix"
