Trying to get clarification about ensuring that our allergen management program is robust enough for the FDA.  Working in a bakery that has quite a few allergens.  Within the tree nut category, we have 6 different tree nuts alone.  Is the expectation that we perform an allergen clean between each of the tree nuts or can all the tree nuts be categorized together and just perform the allergen clean following the tree nut production before moving into peanuts.

Literally if we have to have a different color for each of our allergens plus the 6 different tree nuts, then we have run out of color coded equipment!

Thanks in advance for your response!

Hi MsFS

I think you will be fine in doing just one clean after the tree nut production as the labels of each product would specific the type of nuts in them. May be you would like to add in your labels statements such as" produced on the line on which other nuts products were produced".
