I'm curious to how long it would take an external consultant to complete an SQF GAP assessment and audit for a pork slaughter and cut facility?

Depending on the size of the facility and complexity of the FSMS, 2 - 3 days to be thorough and ensure that everything is covered. It is best to be critical at the gap analysis stage.

Somewhere in the area of 3.5 - 4 days (depending on size/complexity of systems and facility.)  .5 of that is normally summary write time.
