BRC 5.6.1.1, Product Inspection and Testing

I don't post very much but have learned much from reading topics posted here.

 

My question is I'm having a little difficulty answering a NC from my BRC audit in June. The NC was clause 5.6.1.1.  I wonder if I'm overthinking this or not thinking logically.

 

I had no risk assessment for finished product / environmental monitoring.

 

I work at a bottled water plant very low risk.  I have the methods and specification limit for testing outlined in the QC procedures.

 

I don't have a frequency assigned as our CCP is ozonation and monitoring times are indicated, all other testing is conducted when the ozone is checked in the lab.  I'm hung on the risk assessment required at this clause - should I do a risk assessment for the microbiological, chemical, physical and organoleptic?

 

 Any help would be appreciated. I did a search for this clause in the forum but 1 link is missing and the other 2 were not on page listed.

You do this in your general HACCP risk assessment dont you? At least thats what I did. I based the frequency and what needs to be tested on my risk assessment

5.6.1.1

There shall be a scheduled programme of testing covering products and the processing environment,
which may include microbiological, chemical, physical and organoleptic testing according to risk. The
methods, frequency and specified limits shall be documented

 

IMO the English is ambiguous but is probably intended to mean that the "risk" bit is (a) mandatory and (b) to be documented.

 

"How" is arbitrary of course. Just one of the customary BRC irritants.

 

Maybe some kind person with the I.Guidelines can offer a suggestion.
