Hi Rani
There are some great books on the subject like HACCP - A Practical Approach by Sara Mortimore, which will explain everything and more on what you need. There is a alot of information required to ensure they are audited robustly to protect your buisness. You need to approach such subjects as, their building being fit for prurpose, their quality systems, whether they have any certification, do they have HACCP, written procedure, their history, any recalls.............. It can go on and on. You need to have or be a robust auditior so you cover off they site effectively and ask lots of questions so you get to the bones of the company and uncover any issues
cheers
