Does anyone out there have an effective way of documenting clause 8.1 of the YUM Quality Standard? This clause requires a process flow representation for the products manufactured for YUM! . A matrix document is also required. Does anyone have a template for these things?

Make a flow chart of how your products are made. Include all material receipt and processing steps.

There should be plenty of examples, just use the search function of the forum.

Hi millie,

It sounds like you are a newcomer to haccp systems ?

Maybe post the quality standard here. There are various ways of presenting a flowchart in respect to the textual content shown.

By "matrix document" do you mean a Likelihood of hazard  vs  Impact/consequence of hazard  matrix ?

Kind Regards,
