Hi

Can someone advise me on the raw material requirment in UK for mincing. What I would appreciate clarity on is what age of frozen vl trim can be used to mix with fresh vl trim? and does traceability work the same for frozen as it will for fresh.

Last time I checked in Canada YOU CANNOT MIX FROZEN WITH FRESH, moreover, you shouldn't be mixing lots for mincing anyway, as your asking for trouble down the line.

 

If you mix frozen in with fresh, it then needs to be labeled as previously frozen (and your customers will not like that)

 

Save frozen trim for further processing (lunch meat, sausages and the like)

 

Traceability remains the same regardless of fresh or frozen, you still need to know what was made when, sold to whom with what ingredients etc etc etc


Please stop referring to me as Sir/sirs
