Not quite sure what you are asking.
Can you clarify what you mean by "food matrix completed by AOAC" ?
Afaik AOAC always provide (often in their Journal) validations of their approved procedures.

Microbiological Testing Criteria
Food safety is our number one priority, at raw material production, and at the point of manufacture and in our restaurants. Considering the complexity and diversity of all products prepared for use within a McDonald’s restaurant, suppliers are accountable for determining the best microbiological methods are used that could vary from facility to facility even for the same product. As mentioned earlier in this message, from SQMS audit results and supplier site visits, we sense the need to confirm the importance of using the best microbiological test methods, that provide the most accurate results. From a Global Quality Systems perspective, we request that the following screens be met for determining the microbiological method used; that will become part of the SQMS document revision planned for 2019 and then included in the audit document:

What is the slaughter house testing for at their end?
I would suggest salmonella, ecoli and campy, but you can't possibly test every shipment. Proper salmonella is a 48 hour test
The only way to validate these tests is to perform them either in house AND an accredited lab or send the same samples to 2 different accredited labs

Hi Zargham,
It means that –
(1) Specific microbiological methods as applied to, say, food matrix X should be validated.
(2) The validation should (a) have been done on food matrix X, (b) have been carried out by AOAC or ISO or ….. agency.
For example, avoid using micro. method Z for chicken if it has only been validated as accurate for seafood.
You might consider asking the author of the quoted text what they consider an appropriate food matrix for the specific item you are wishing to evaluate. Or maybe check the (usually) referenced article in J. AOAC (if AOAC method) which details their validation.
Some AOAC methods specifically list the foods which have been found compatible with the method (and vice-versa).
