Need help with audit observation on adequacy of hazard analysis worksheet

Hi, auditor gave me 2 observation during the  audit and one of them are per below

 

1)Improvement should be given to review the hazard analysis worksheet adequacy, found the [heat sealing] step at Shortening  was rated no potential hazard exist. As this sealing step is to preserve the product and to enable longer product shelf life.

 

need some ideas on how to answer this observation.

You need to review in line with principles: 

 

Physical - Foreign body contamination 

Microbiological - Bacteria (packaging sterilisation)

Sounds like you need to review your hazard analysis for this step, and document the potential hazards. This could be recontamination and subsequent growth of bacteria, introduction of physical hazards, potentially malicious tampering (depending on the standard concerned and nature of the product) etc. You'll need to go through with your HACCP team, and then your response to the auditor is that you've reviewed your hazard analysis, sent them the updated copy and possibly the minutes from the review process etc.

It looks like you need to review your HA because auditor has identified a potential hazard that you have not identified. 

 

Redo the HA and submit to auditor.

^^^^(red) - Yr auditor's specific comment is imprecise IMO.

 

For a normal pack, from a traditional haccp POV, the sealing is protection from subsequent hazardous contamination.

 

Is the shelf-life based on non-safety related characteristics ? I anticipate = Yes ?
