I am having a hard time locating a creditable source for justification of cooking times for bakery items such as cookies and bon bon's.  The closest resource I have found is one for muffins.  Any recommendations?

is this the information PieGuy has provided (AIB killstep calculator)? 
For me your questions needs some more details whether it is related to food safety or processing.
