Hello,
In what capacity do you mean? I.e. documentation & traceability systems / data collection devices in production / 'smart glasses' for remote auditing etc? Or just in general?

I think the future of technology also depends on the size of the company.
In my company, we don't really use technology because we are super small (4 employees total), it's cheaper and quite honestly easier to perform tasks manually. The only two pieces of technology we use are wifi-enabled data loggers for temperature monitoring and Document Compliance Network for the storage of supplier documents; and I think I could build an excel spreadsheet to replace DCN. That's not to say we don't keep electronic records, excel spreadsheets have some amazing functionality.

[font=Calibri][size=4]Digitalproducttoday, here’s what I imagine the future of QC in food looks like: Everything will be spectroscopy and AI-based. There won’t be any sample prep or even chemical tests at all being routinely conducted, only sensors that are placed off-line/at-line/in-line (depending on the size of the production facility), and you’re simply presenting the sample to the sensor. From there a beefy, self-learning software package will take comprehensive chromatographic data and perform cross-checks between that data and pre-recorded data about known hazards, quality-related components, and previous batches. Out of the other end you’ll receive reports with actionable information (e.g. pass/fail/flag for more testing). Humans will essentially be taken out of the initial screening process allowing for precise administrative controls and removing the human error from sample prep/testing procedures/ and analysis. The closest thing we have to this currently is without a doubt hyperspectral imaging and the work it’s doing to perform comprehensive chemical analysis, monitoring multiple parameters simultaneously in a real-time, remote manner. In the environmental monitoring program (EMP) arena, I envision predictive microbiology. When i was managing an organization's EMP, i would manually review and trend the data (i.e EBAC, Salmonella, APC). Any upward trend in EBAC & frequency of positives in Salmonella is cause for concern and immediate action.
Ai would do a better job in this process. A program would (I imagine) scan the entire Plant (no more swabs or ATP), determine microbial counts (no more 3rd party testing or rapid testing machines), alert Sanitation Team members to areas of concern and rescan the area for cleanliness.
