Hi all members. Just a quick Question regarding Shelf Life Testing of Ready To Eat Meal Product. Products are Chicken Curry, Lamb Curry and Rice Meals (such as Biryani and Pilau Rice). Shelf Life Testing is For 8 Days what Parameter should someone consider for Shelf Life Evaluation? What is the acceptability of Microbiology (TVC, enterobacteriaceae, Pseudomonas etc) and organoleptic Test. Thank You

It may be a quick question but there is no quick answer.

 

It relates to storage conditions which are omitted.

 

+ you have to decide which items control the shelf life.

I am guessing the finished product is stored chilled, eg 2-8degC, and is not a specialised packaging, eg not vacpack or gas flushed.

 

If so, the shelf life/"Use By" is likely based on compliance with UK/RTE Regulatory limits for L.monocytogenes.

 

Additionally, it is customary that at end of declared shelf life, the BCPA data fully comply with Product Specification (which, for micro, are presumably dictated by the UK Guidelines).
