I have a question regarding cleaning of proofing basket liner We are a bakery and makning traditional European style bread, in our process, we use proofing baskets and a cloth liner is used in those baskets.
But this cloth liner is never washed or cleaned and used till the time it is damaged.
Sometimes i see dough deposit on the liner. When i asked production manager to get these washed and cleaned, she said there is no risk as the bread goes in the oven after proofing.
In terms of micro, i could not speak much but i am not satisfied with not cleaning of the cloth liner.
Could you please help in seeing the risk in not cleaning the cloth liner.
