Are you asking how to ensure piece weight is correct?
I work at a cookie factory that uses wire cut machinery to produce some products.
It's generally machine setup and head pressure on the dough that achieves proper scaling weight.
Was your question relating to something else?

Thanks for the reply, but my question is more related to alignment of the dough after the dough is cut. That is, since the dough is sticky, the pre-formed dough does not fall in a straight line.
Any suggestions on this topic will be greatly appreciated.
