Hello all,

 

We are a small sized bakery in Canada.

We are looking to use a co-manufacturer to make some corn chips for us.

The chips are baked and then fried.

When we ask for specifications,  they are unable to provide them to us?

When we ask for formulation and ingredient specifications so we can calculate nutritional info on Genesis,  they have provided.

However,  they have not provided oil values in the formulation as they do not add the oil into the product.

The chips are baked and then fried.

My question for all of you is,  how much oil do I need to add in to calculate the most accurate nutritional information and where do I place this on the ingredient declaration?

 

Can anyone familiar with baking and then frying chip in shortening oil offer any insight?

Don't calculate, send 3 different samples for analysis. Then you will get the more reflective nutritional data. The oil will be reflected in the saturated fats and not necessarily direct oil.
